Dal Khichdi - How to make healthy Dal Khichdi at home ( Restaurant Style )

Restaurant Style Dal Khichdi Recipe 

 Khichdi is a recipe from South Asian cuisine. It is made from dal & rice. You can make plenty variations of this recipe. It can be made with normal dal & rice as well as with ajra, fada (daliya/crushed wheat) and dal. In northern areas it is considered as one of the first solid food for babies. 

It can be known as salty porridge also. As of Ayurveda experts Dal and Barley khichdi is also a good option for people suffering from diabetes, PCOS and those aiming for weight loss. 

Dal Khichdi Recipe

 

Khichdi improves the immunity & energy. Among them moong dal khichdi has a low glycaemic index such that it helps bring down insulin, blood glucose and fat levels in the body. 

Means it lowers blood sugar level & keep diabetes under control. Among all dals moong dal is easiest to digest. 

It is also perfect if your stomach is upset & if you want to eat something light. The most common & basic khichdi is moong dal khichdi from the land of west India. It is served with a bowl of piping hot Gujarati Kadhi. It can be served with simple fresh curd, pickle, papad and potato curry also. 

Normally moong dal khichd is made from rice & moong dal with the ratio of 1:1, but to make it healthier, today we are going to make it with rice, moong dal, chana dal & masoor dal. Enjoy cooking!

  • Preparation time - 10 minutes
  • Cooking time - 15 minutes
  • Serves – 4 person

Ingredients to make Dal Khichdi: 

  • ¾ cup rice
  • ¼ cup moong dal
  • ¼ cup chana dal
  • ¼ cup masoor dal
  • ¼ teaspoon ghee
  • 3 ½ cup water
  • Salt to taste
  • ¼ teaspoon turmeric powder
  • For tadka (tempering): 
  • 1 teaspoon ghee
  • 1 teaspoon oil
  • 1 teaspoon mustard seeds
  • 1/8 teaspoon hing (Asafetida) 
  • 1 bay leaf
  • 1 onion finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • ½ teaspoon crushed green chili
  • ½ tomato finely chopped
  • ¼ teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • Salt if needed
  • 1 cup water
  • Finely chopped coriander for garnishing

Method to make Dal khichdi: 

  • Wash and soak rice & all dals in tap water for 5 to 7 minutes.
  • Drain extra water from dal & rice.
  • In a pressure cooker heat ghee and add soaked dal & rice to it. Sauté for 2 minutes and add salt, turmeric powder & water to it. 
  • Add water & pressure cook it up to 3 whistles at medium flame. Let it cool perfectly. 
  • Heat oil & ghee in a wide pan. Add mustard seeds to it. When they crackles add bay leaf & hing. Cook for 1 minute and then add onion, garlic, ginger & green chili to it. 
  • Cook well and add chopped tomato to it. Let it cook until soft and mushy. 
  • Now it’s time to add all dry spices. Cook well. 
  • Add cooked khichdi to it. Add hot water to adjust consistency. 
  • Cover and cook for 4 to 5 minutes. Let the khichdi absorb the flavors. 
  • At last add freshly chopped coriander leaves and serve hot with curd/kadhi/papad/pickle/potato curry etc. 

Dal Khichdi Recipe Tips: 

  • In case you want to use only moong dal you can use it with the ratio of 1:1. Means ¾ cup rice & ¾ cup moong dal.
  • Soaking is not compulsory, it is to reduce cooking time. 
  • You can prepared it with only ghee also.
