Basically, white sauce pasta is a simply cooked pasta mixed with silky smooth white sauce. White sauce is made from butter, milk & flour. White sauce is also known as Bechamel sauce in French. As white sauce is originated from the Italian & French Cuisines. It can be known as mother sauce of all pasta sauces. White sauce contains a definitive amount of calcium & protein. It can be low in calories in compare to other sauces. There are many types of pasta available in the market, some of them are spaghetti, penne, ravioli, linguine, rigatoni, farfalle, fusilli etc. They are paired with variety of sauces. 

This is one of the most demanding dish by kids and even adults. This is an easy and popular cheesy pasta recipe made with creamy white sauce with soft and tasty penne pasta. It is inspired from the Italian white-colored pasta but tweaked and adjusted to the Indian taste buds. It can be either served for lunch or dinner or as a perfect lunch box recipes for kids and adults. 

It can be made alone without vegetables but with vegetables it makes a healthier meal option. To make it healthier you can add carrot, capsicum, onion, broccoli, sweet corn, olives etc. So here is my detailed recipe for white sauce cheesy, creamy pasta. Enjoy Cooking! 


White sauce pasta


    Preparation time – 10 minutes
    Cooking time 25 to 30 minutes
    Serves – 4 person

    Ingredients to make White Sauce Pasta: 

    For pasta:
    3 cups pasta (penne or elbow) 
    9 cups water
    1 tablespoon oil
    1 teaspoon salt
    For white sauce: 
    3 tablespoon butter
    5 tablespoon maida (refined flour) 
    3 cups warm milk
    Salt to taste
    1 teaspoon freshly crushed black pepper
    1 teaspoon oregano/mixed herbs
    1 teaspoon chili flacks
    1 cube grated cheese
    For vegetables: 
    1 tablespoon oil
    2 tablespoon butter
    1 onion cubes
    ½ cup par boiled carrot chopped (cubes)
    ½ cup capsicum chopped (cubes)
    ¼ cup boiled sweet corn
    2 tablespoon par boiled broccoli
    1 tablespoon black olives (sliced)
    Salt to taste
    1 teaspoon freshly crushed black pepper
    For garnishing: 
    Grated cheese
    chili flacks
    Oregano/mixed herbs
    Black pepper powder

    Method to make white sauce pasta: 

    For pasta:
    In a broad vessel/sauce pan add water, oil & salt. Let it come to boiling temperature. Add pasta to it & cook it up to 80%. 
    When cooked, drain and pour some cold/tap water over it to stop cooking process. 
    Keep a side. 
    For vegetables: 
    Heat oil and butter in a pan. 
    Add all vegetables to it. Now it’s time to add salt & black pepper powder to it. Don’t add olives at this stage. 
    As we have used all vegetables par boiled, we just need to cook it for 2 minutes. So that we get coating of butter & spices over it. 
    Keep a side. 
    For white sauce: 
    Add butter in a wide thick bottom/non-stick pan. As soon as it melts add maida to it. Roast it until it releases nice aroma at low flame. 
    Now add hot milk slowly in it. Make sure to add milk slowly and stir constantly to avoid lumps. Let the sauce thick at low flame. Add all dry spices & mix well. 
    When cooked add grated cheese to give a creamy texture. 
    How to assemble: 
    In a ready add sautéed vegetables. Mix well.
    Now add properly drained pasta to it. Mix well and cook for 2 minutes at low flame. 
    When ready transfer to serving bowl & at last sprinkle some chili flacks, oregano/mixed herbs, black pepper powder & grated cheese. Garnish with some olive slices. 
    Hot and delicious white sauce pasta is ready to serve.  
    Tips: 
    Use semolina pasta to make it healthier. 
    Always use warm milk to avoid lumps in sauce. Make sure to add milk slowly to avoid lumps. 
    You can use crushed garlic if you like it. In that case you need to add it before adding vegetable to the pan to avoid raw taste of garlic.
