Preparation time - 10 to 12 minutes
Cooking time less than 5 minutes
Ingredients to make Paneer and Peanut Salad:
1/2 cup peanut
Paneer from 250 ml milk
I always use cow milk for making paneer
1/4 cup chopped cucumber
1/4 cup pomegranate seeds
1/4 cup boiled sweet corn
1/4 cup all 3 colour bell peppers
1/4 cup chopped red carrots
1/4 cup grated beetroot
A handful of chopped coriander
2 to 3 tablespoon mix seeds like melon, pumpkin and sunflower seeds
1 teaspoon lightly roasted and roughly crushed flex seeds
Salt to taste (I used rock salt)
Freshly ground black pepper as per taste
Chaat masala to taste
Again lemon juice as per choice
Method to make Paneer Peanut Salad:
- Make paneer from milk and hang for minimum 20 minutes .
- Wash and chop all vegetables excluding beetroot.
- Boil peanuts and corn, I boiled it in microwave. It may take hardly 2 to 3 minutes.
- Peel and grate beetroot. Remove seeds from pomegranate.
- Crumble paneer.
- In a serving bowl add all above vegetables and pomegranate seeds. Mix well and add all dry spices to it.
- Again mix properly and add lemon juice to taste. Mix and at last add mix seeds and flex seeds powder to it.
- As this salad looks so beautiful, it doesn't need garnishing. But you can garnish it with grated beetroot and coriander leaves.
- Our super delicious, super healthy Paneer and Peanut Salad is ready to serve.
- As it contains all healthy ingredients, you can skip your meal to eat it.
