Preparation time - 5 minutes
Cooking time - 10 to 12 minutes
Ingredients to make Sukhdi:
1/2 cup ghee – clarified butter
1 cup whole wheat flour
3/4 cup jaggery (finely chopped)
1/4 cup coarsely crushed/chopped roasted almonds & pistachio
Ghee for greasing
For garnishing:
Sliced almonds
Sliced pistachio
Method to make Sukhdi:
- In a heavy-bottomed pan/nonstick pan, heat ghee and add wheat flour to it. Roast it at slow flame until the flour starts releasing a pleasant aroma and turns slightly brown in colour. This step will take around 8-10 minutes. At last add a spoon full of ghee for luster.
- Remove the pan from the heat and then add chopped jaggery to it. Mix everything thoroughly, ensuring there are no lumps. The mixture will come together to form a crumbly texture. Make sure to stir quickly this time.
- Add the coarsely crushed almonds and cashews to the mixture. These nuts add a delightful crunch and nutty flavour to the Sukhdi.
- Grease a flat plate or tray with a little ghee. This will prevent the Sukhdi from sticking to the surface. Transfer the mixture onto the greased plate and press it gently with the back of a spoon or spatula. You can also use your fingers to shape the mixture evenly. But be careful while doing it with fingers as the mixture is hot.
- Sprinkle sliced almonds & pistachio over it and gently press it. While the mixture is still warm, use a knife to cut it into your desired shapes - usually, square or diamond shapes are traditional.
- Allow the Sukhdi to cool and set completely for about an hour. It will solidify as it cools down.
- Once the Sukhdi has set, gently separate the pieces along the pre-cut lines.
- Serve this delectable treat to your family and friends, and relish the blend of flavours and textures.
- As if I share my experience I love Sukhdi when it is hot. I can't stop myself to eat a hot piece of sukhdi 😋. Even you can make it warm in microwave also. It will take only 10 seconds.
