How to Make Badam Kheer

Recipe by Naiya Sheth : Learn how to make Badam Kheer. Kheer is well known Indian traditional recipe. But it has a long- long process of boiling milk with rice. Traditionally kheer is made by mixing milk, rice and sugar, and of course lots of dry fruits. To make it quick and rich condensed milk and almonds are used. Here it’s a homemade recipe for Badam Kheer which you can serve easily and quickly. If it is served as cool desert set kheer in individual pot after cooling at room temperature and cool in refrigerator.

Preparation time – 40 minutes
Cooking time 20 minutes
Serves – 10 people

Ingredients to make Badam Kheer:

1 tin – 400 gram condensed milk
1 liter milk
50 grams almonds
50 grams cashew nuts
¼ tea spoon almond essence

For garnishing:

Roasted almonds
Saffron
Silver foil

Method to make Badam Kheer:

  •  Blanch almonds and remove skin.
  •  Soak almonds and cashew nuts in hot milk for 30 minutes.
  •  Grind it with milk and make smooth paste.
  •  Heat remaining milk and when it comes to boil add condensed milk and almond paste. Mix well.
  •  Again cook for 5 minutes, stir constantly.
  •  Remove from fire and add almond essence.
  •  Garnish Badam Kheer with silver foil, sliced almonds and saffron.
  •  Serve hot or cold. For more traditional look it can be served in clay pot also. Just pour in pot and make garnishing individually.
