How to Make Manchow Soup

Recipe by Naiya Sheth : Learn how to make Manchow Soup. In earlier recipe we learn to make hot n sour soup, minestrone soup, tomato soup, sweet corn soup and cheese corn tomato soup. But now it's time for very popular Chinese street food - soup Manchow soup. It's very testy and healthy soup. It's a great combination of ginger, garlic and mint. Actually it's a combination of lots of vegetables, means a good option for summer. 

Preparation time - 15 minutes
Cooking time - 15 minutes
Serves - 4 persons

For stock:

4 to 5 florets cauliflowers
1/2 cup grated carrot
1/2 cup grated cabbage
1/4 cup finely chopped celery
3 to 4 table spoon finely chopped spring onion

For soup:

4 cups vegetable stock
1 table spoon ginger paste
1 table spoon garlic paste
2 table spoon grated carrot
2 table spoon grated cabbage
2 table spoon finely chopped capsicum
2 table spoon finely chopped cauliflower
4 to 5 mint leaves freshly chopped
2 table spoon corn flour 
1 to 2 green chillies finely chopped
1/4 tea spoon black pepper powder
Salt to taste

To serve with:

Fried noodles
Soya sauce
Chilli vinegar

Method to make Manchow Soup:

For making stock:

  • In a microwave safe bowl take all stock ingredients and 4 cups of water. Cook for 8 to 10 minutes at MICRO HI. 
  • Strain and keep aside.

For Soup:

  • Heat oil in a pan and add ginger, garlic paste and green chilli to it and cook for 1 minute.
  • Add all vegetables and cook for 2 to 3 minutes at high flame.
  • Add mint leaves and vegetable stock to it. Cook till boiling temperature.
  • Mix corn flour to 1/4 cup water and make a slurry. Add it to soup mixture.
  • At last add salt and black pepper power and cook again for 3 to 4 minutes. 
  • At the time of serving top with fried noodles and serve Manchow Soup immediately.
  • Serve it with soya sauce and chilli vinegar.
