Diwali Special Recipe Kesar Phirni

Recipe by Naiya Sheth : Learn how to make Kesar Phirni. Diwali or Deepavli is the biggest and brightest festivals of hindus. It is called the festival of lights also. It is celebrated across the nation with great pomp and excitement.   Basically diwali marks the beginning of Hindu and Gujarati calender. So for this special festival we have a very nice and rich home made recipe for kesar phirni. In earlier recipe we learn about the making of phirni and chocolate phirni. The method is same as normal phirni but a rich taste of kesar - saffron is added. So enjoy this rich and delicious recipe this festive season.

Preparation time - 5 minutes
Cooking time - 15 to 20 minutes

Ingredients to make Kesar Phirni:

1 litre milk
1/4 cup basmati rice
200 grams sugar
1 1/2 tea spoon kesar
1 tea spoon cardamom powder

For garnishing: 

Kesar
Silver foil

Method to make Kesar Phirni:

  • Wash and soak basmati rice for 30 minutes. Drain and crush them in to fine paste in blender.
  • Soak saffron in 1 to 2 table spoon lukewarm milk. Keep a side.
  • Heat milk in a non stick pan and let it come to boiling temperature. 
  • Add sugar, saffron and rice paste to it. Mix well.
  • Again boil at low flame. Stir properly to remove lumps.
  • Cook till thicken like custard.
  • When ready remove from flame and let it cool at room temperature.
  • Now add cardamom powder to it and let it cool in refrigerator. 
  • At the time of serving pour it in a serving glass or small kuldi. Garnish with saffron and silver foil.
  • Delicious Kesar Phirni is ready to serve.
